Owner Chris Eley started Goose the Market in 2007, a neighborhood butcher shop, which led to Smoking Goose, which opened in 2011. In their curing and smoking facilities, they create amazing salumis, sausages, and smoked meats. Instead of focusing on negotiating a cheap price, they get to know their partners, and use animals that are raised naturally and humanely. They use all natural and organic ingredients and no added nitrates and they hand-tie each piece.
This rustic, hunter’s style salame containing elk is seasoned with blueberries and mead from New Day Meadery in Indiana. The floral notes of the mead and the sweet notes of the blueberries are an excellent counterpoint to the gaminess of the elk. Try this with some cheddar and and a crusty bread.
