Cowgirl Creamery, owned by Sue Conley and Peggy Smith, began as Tomales Bay Foods, which was a way to help local agricultural food producers market their products. The business expanded into a Creamery which specialized in fresh, organic cheeses. With the help from intern and dairy scientist, Fons Smith, they developed their first bloomy-rind cheese--Mt. Tam! Made with organic milk from the Strauss Family Dairy, this cow’s milk triple-crème is smooth and buttery with a creamy, mellow, earthy flavor reminiscent of white mushroom, and took 2nd place at the 2019 American Cheese Society. Great with bubbly!
