In the 1990's, Michelle Buster believed there were better Manchego's in the world than what was on the US market. After years of searching and sampling with artisan producers, she found the cheese she'd been looking for. With its characteristic zigzag pattern on the rind, she introduced this 6 month version to the US because of its intense butter flavor and smooth texture. A Manchego truly aged to perfection.
