Bayley Hazen is a natural rinded cow's milk blue cheese made at Jasper Hill Farm in Greensboro, VT. With one of the highest quality milking herds (all Ayrshire cows who have silky milk) in the country, Jasper Hill is reviving the agricultural community of the Northeast Kingdom of Vermont. The Kehler brothers have constantly been innovating their farm and cheese ageing cellars in Greensboro, VT. This is a whole raw milk blue aged between four and six months. The paste of this Vermont blue cheese is more dry and crumbly than most blues, with each bite bursting with peppery and cream-y flavor. This cheese is named after an old military road that traverses the Northeast Kingdom in Vermont.
