Produced in some form since the 1940's SarVecchio is now produced by Sartori Cheese. The Sartori family has been in the cheese business since the 1930's- they were the first exporters of cheese to Italy and Japan.
An American version of Parmigiano Reggiano, this cheese is aged for at least 20 months and has that same sweet, pineapple smell. Look for a caramel and nutty sweetness and a little fresh acid with a tiny crunch. This cheese is perfect to grate on your pasta dishes or just slice and eat with a piece of crusty, great bread.
