While most Ricotta is made from skim milk or whey, this cheese is made from whole, Grade A Vermont farm milk. Calabro Cheese Corporation was founded in 1953 by Joseph Calabro, an Italian immigrant with a PhD in Physics and Mathematics. This old-fashioned, hand-dipped ricotta is a fresh, delectably rich and creamy cheese exhibiting a delicate flavor of soft sweet butter, and took 1st place at the 2019 American Cheese Society.
Use in recipes or as a gorgeous breakfast with a spoonful of jelly or olive oil and pistachio crumbles on toast.
