Reading Raclette is the newest addition to French/Swiss Raclette's repertoire. Known for their version of Tarentaise and for supporting the non-profit Farms for City Kids, Spring Brook has become a great source for artisanal cheese. Reading Raclette has a slightly elastic paste and a fruity, smooth flavor that balances the slightly funky aroma from the washed rind. This is a magnificent example of the classic French/Swiss Raclette that can be eaten alone or melted.
