One of the most famous sheep milk cheeses in the world, pecorino is made by several producers in Italy. Using whole - not skimmed - sheep milk, Fulvi produces a rich Pecorino Romano that is high in butterfat, making it less dry and hard than ones produced on Sardinia. Fulvi is also slightly less salty. Grate it over pasta, nibble on chunks, showcase on a cheese plate... it all works. And don’t forget a full-bodied Italian red wine to go along!
